More skills and thrills. 50 oysters to clean and shuck. Hold the oyster in a folded tea towel and then fold the tea towel over your hand to avoid pointy repercussions. Using the oyster knife work down just to either side of the hinge point, it should just pop and then run the knife along the top to detatch. It is indeed shiny and new and some well deserved attention to Saffy and her work. Regulars Santos and Jeanne too. Where's the guernsey for the Lord of the Ring? Tsk

Oysters in the shell can be a tad crunchy so undressed is best althought I find a veil of breadcrumbs most alluring at times.
